To make the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (makes 850ml, to serve 10)

A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Put the listed components into a pan, bring to a light boil, mixing until the sugar dissolves. Next, remove from the heat and leave to reach room temperature completely. Pour to a sterilised bottle, close it keeping it chilled, it can be stored for about one month.
Preparing the Premix: Mix all the liquid ingredients into one big jug, allow it to infuse for 60 minutes, then strain preferably using muslin, to ensure it's fully clarified.
For serving: Pour 85ml from the premix into a stirring glass filled with ice, and stir carefully for one minute to cool it down. Pour into a chilled martini glass or similar, decorate with the cranberries and complete it by giving it a brief mist of mandarin oil over the top.
